PYARE BARVE - GREEN BEANS SAUTEED WITH COCONUT

Serves: 4

Ingredients

  • 250 g ( 1/2 pound) green beans, cleaned with ends snapped
    1 large shallot
    1 pinch of cayenne or red pepper powder
    1/2 teaspoon powdered cumin
    1 pinch of turmeric
    1/2 teaspoon of mustard seeds
    3 tablespoons grated coconut
    1 teaspoon curry powder
    2 tablespoons of oil
    1/4 cup water
    1/4 teaspoon of salt

Preparation

  • Wash and cut the beans into small pieces. Peel and mince the shallot.
    In a saucepan, place the beans, shallot, chili powder, cumin, turmeric, washed curry leaves, coconut and salt; pour 1/4 cup of water.
    Simmer 8 to 10 minutes over medium heat until the beans are cooked.
    In a skillet, sauté the mustard seeds in the oil while covering. Once they burst, add the beans. Mix and serve.
