CAULIFLOWER PARMESAN GALETTES

makes: 12 pieces

A unique recipe with cauliflower

Ingredients

  • 3 lb head of cauliflower (a medium size cauliflower)
    1/2 cup freshly grated Parmesan cheese
    2 tbsp fresh parsley, chopped
    1 tsp garlic powder
    1/4 tsp ground white pepper

Preparation

  • Cut cauliflower florets off the stem.
    Steam cauliflower florets until tender. (10-15 minutes)
    Place steamed cauliflower florets in a food processor and pulse a few times to get fine crumbs.
    Transfer cauliflower crumbs in a cheese cloth and squeeze out all the liquid.
    Place cauliflower in a mixing bowl and add Parmesan cheese, parsley, pepper, and garlic powder. Mix well, until all are evenly incorporated.
    Preheat the oven to 425 and line a large baking sheet with foil or parchment paper.
    Use a cookie scoop to scoop out cauliflower mix. Press it into a ball and place it on the baking sheet.
    Press down to flatten into a thin disk about 3 millimeters thin.
    You will get about 12 pieces.
    Bake for 15-17 minutes, until deep golden brown.
    Let the cauliflower crisps cool before taking them off the baking sheet. Use a spatula to gently scoop them up.
