ENDIVE SALAD WITH BEETS WALNUTS AND ROQUEFORT CHEESE

Serves: 4

Different color beets add contrast to this recipe.

Ingredients

  • 4 endives, quartered and cored
    2 medium beets, cooked, peeled and diced
    6 oz Roquefort cheese, crumbled
    5 oz walnuts, broken up a bit and toasted
    1/2 cup walnut oil or olive oil
    2 Tbsp red wine vinegar
    salt and pepper to season

Preparation

  • Separate the endive leaves and fan them out on a plate. Scatter over the beet, Roquefort cheese, and nuts.
    Whisk together the oil and vinegar. Season with salt and pepper. Drizzle over the salad. Serve.
